Funfetti Holiday Cookie Bars

Elaborate, made-from-scratch cookies are fantastic.   Of course!  However, time is an issue for most people, and particularly so during the holidays.   This cookie bar recipe is a prefect compromise for time and homemade appeal.

They tastes great and are fun to eat.  Kids love them.  They have a sugar-cookie taste; they’re like something you would expect from a bakery.   Really!


You only need three ingredients!   (Hooray!)

1 box of Funfetti Cake Mix

2 eggs

1/3 cup vegetable oil


Combine the ingredients in a mixing bowl and stir.

Drop dough into a baking dish, press batter/dough down evenly, spreading across the entire area of the dish.   I urge you to use parchment paper to cover your dish before baking, it makes life easier.

I used a 9×9 square baking dish.   I spread parchment paper over it, pressing it in and around, covering the entire bottom and sides.  Then I poured the batter/dough into it.


Bake in oven at 375 degrees for about 20-23 minutes.

After they baked and had cooled down some, I simply lifted the sides of the parchment paper and bars out of the baking dish and set, cookie bars intact, onto a cutting board.   It was super easy to lift the paper and bars out in one motion.  The baking dish looked clean as could be.

I cut the bars into squares over the parchment paper on the cutting board.  Then served them on a plate.

These bars are the lazy baker’s dream (yes, I would know).   You could decorate them with icing and sprinkles, which would be cute.   For me, less is more with this dessert.  I leave the bars plain, and just let the red and green specks be enough.  Which they are.

This recipe is so practical.  Perfect for making with kids.  Perfect for pitch-ins and holiday gatherings.   Quick, easy, inexpensive and (almost) homemade.   *wink, wink*
