Sometimes you just need to fix a tasty dinner – fast. You only need a handful of ingredients and minimal time to make this simple recipe. The flavor you get combining the peppers, olive oil and garlic is simply delicious!
I use freeze dried garlic that you can find in the refrigerated section at the grocery store. It has a long shelf-life, is in perfectly-sized diced pieces, and garlic taste you would expect. I like using green, red and orange peppers. However, I didn’t have an orange pepper the day I photographed this meal. I also omitted the onion this time, but a little bit of sweet onion added to the mix tastes great too. My husband isn’t too keen on onion, so I left it out. I use either a frying pan or my wok to fix it all in (I love my wok!).
Here’s what you need:
Chicken breasts, cut into cubes or strips
peppers (green, red and/or orange)
garlic (fresh, freeze dried, powder – it doesn’t matter)
any other optional fixings you may like – shredded cheese, lettuce, sour cream
Simply toss your chicken, peppers, onion and approximately 1 teaspoon of garlic (measured using freeze-dried garlic) into a pan that has been sprayed with cooking spray and generously doused in olive oil.
Allow to simmer in frying pan, stirring occasionally, until chicken starts to brown. Spoon over warm tortillas, add any fixings you prefer. Keep it simple and enjoy!
